I hope everyone had a great Memorial Day weekend! Ours was full of spending time at home + cooking. Here are some of the recipes:
Spinach + Feta Chicken Sausage Fettuccini via Al Fresco
Salmon Teriyaki with Asparagus via Men’s Health (April 2012 issue) ~ we also served with a side of crawfish. It was the first time I’ve seen them offered at the seafood counter.
Maxwell Street Polish Sausage Sandwich via Food Network Magazine served with Almost-Famous Fried Pickles via Food Network Magazine
Black + Blue Doughnut Pancakes via …and then I ate it! ~ the recipe is for plain doughnut pancakes, but I threw in a handful of blueberries and blackberries
Lemon-Raspberry Sorbet Cake via Food Network Magazine ~ Since I don’t like chocolate, I substituted the chocolate wafer cookies with Nilla wafers + the chocolate chips with white chocolate chips
Beef, Chorizo + Tater Tot Tacos via Food Network Magazine(chorizo-potato tacos) ~ we pulled the “50 Tacos” insert out of the May 2012 issue + combined their recipe for basic ground beef (we subbed steak strips) with the chorizo-potato recipe (we subbed tater tots for the potato) to make this combo taco.

I’ve only tried a few recipes this past week. With Husby being out of town, I just have no motivation to cook. It is really putting a damper on my kitchen time!
Grilled Balsamic Pork Kebabs via Rachael Ray Magazine ~ the recipe only calls for onions on the kebabs with the pork, but we added zucchini to get some extra veggies
Buttermilk Pancakes via The Pancake Handbook ~ we added a handful or two of blueberries + they came out fantastic!
Bizcochitos via Food Network Magazine ~ I’ve never even heard of this type of cookie before, but is apparently New Mexico’s signature shortbread cookie. You can really taste the star anise to give it a unique flavor. Great with some passion tea!

There has been a serious lack of kitchen time this past week. Husby has been out of town for work + I’ve had a lapse in motivation to try new recipes for myself. With that said… these two recipes turned out awesome! So here are two killer recipes:
Extra-Yummy Fluffy Pancakes via AllRecipes.com ~ with cinnamon + vanilla, these pancakes were a perfect breakfast treat. Fluffy as promised!
Dulce de Leche Cheesecake Bars via Brandy’s Baking ~ I’ve never used dulce de leche before + this was a great recipe to try it out for the first time
After traveling for a few days + lots of restaurant food, it was nice to get home + be back in the kitchen. We love cooking with each other + being home. We’ll take it any day over a night out at a restaurant. Here are a few of the recipes that have hit the table since being home:
Perfect Pancakes via A Beautiful Mess with Slow-Cooked Hoisen + Ginger Pork via TheKitchn + basic scrambled eggs ~ Husby loves pancakes! We didn’t have buttermilk at the house, so I ended up substituting regular milk with white vinegar. A trick I found online + they tasted great.
Chilled Summer Rolls via Skunkboy Blog with Slow-Cooked Hoisen + Ginger Pork via TheKitchn ~ It took me a few tries to find rice paper wrappers, but did finally find them at Fresh Market. Husby + I had soo much fun making these together on a Sunday afternoon for lunch. I’ll definitely be keeping these in rotation this summer!
Spicy Citrus Fish Tacos + Lemon Lime Shrimp Tacos via instructables with grilled eggplant + zucchini ~ the fish tacos called for a chili rub, but didn’t specify any particular type. We used the Sweet Chili Rub via the Marinades & Rubs book. The shrimp tacos turned out great, but I think we were iffy on the fish tacos. Maybe it was the rub that we chose, not quite sure. I have yet to find a great recipe for non-breaded fish tacos.
